blueberry cottage cheese pancakesIf you are going out for breakfast in Bozeman, the place to go is the Nova Cafe. If you go on the weekend (which you will because most people, except this girl, have those “jobs” that require you to be there weekday mornings) you will have to wait for a while. But it’s OK that you have to wait. It is worth it. They serve veggies from local farms, meats and cheeses from local producers, feature local art, and have homemade baked goods. And they make the best cottage cheese pancakes that they serve up with sour cream and (real) maple syrup. Naturally, I had to try to recreate these at home and they are fantastic!

On a side note, has anyone seen that ridiculous infomercial about the perfect pancake pan? “You flip, and they flop.” I’ll never be able to make pancakes in peace again.frosty blueberriesI used frozen blueberries which I nuked for one minute because it’s not quite blueberry season. Five bucks for a handful of fresh berries right now may be a little steep…

BLUEBERRY COTTAGE CHEESE PANCAKES (inspired by the Nova Cafe)

2 eggs
1 3/4 cups milk
3 Tbsp. oil
1 cup all-purpose flour
1 cup rye flour
2 Tbsp. raw sugar
2 tsp. baking powder
1 tsp. baking soda
scant tsp. salt
1 cup blueberries
1 cup cottage cheese

Combine first three ingredients in a large bowl. Add dry ingredients and stir until mixed through. Last, stir in berries and cottage cheese. Cook over medium heat. Flip once edges dry out and popped bubbles remain empty holes (see photo below — I don’t know how to describe this in more understandable words). Serve topped with sour cream and/or butter and maple syrup.
